Blog #2- The Selection Process

The purpose of this week is to select a product to further our product development. The products that we were testing for our development were Boudin balls, BBQ chicken roll-ups, and Chicken Samosas. First, we cooked several different variations of Boudin balls. Among those variations were fried with breadcrumbs, fried without breadcrumbs, and then baked with and without breadcrumbs. The ingredients include Chicken, pork fat, onions, chicken livers, garlic, pepper, and salt. The product was precooked then ran through a grinder where we formed the balls themselves. They were then placed through a pre-dust, egg wash, and then breaded. Afterwards they were placed in the fryer or baked in the oven depending on the variation. The results were satisfying, the product had great color and taste, but there have been ideas made by the group to better that product. The second product was the BBQ chicken roll-ups. The roll-ups contained shredded chicken, cream cheese, bacon, and cheddar cheese. The BBQ sauce was made homemade with a vinegar base. The ingredients were then rolled into crescent rolls, and then placed into the oven at 400F for 10 minutes. The results were a very tasty product, but very messy as the ingredients did not uniform properly. The third and final product were spicy chicken samosas. The dough used in this product was h

andmade. The chicken breast was pre-cooked and then placed into a mixture with onion, salt, curry, ginger, and garlic. The mixture was then placed into the dough and rolled up to be placed into the fryer. They stayed in the fryer for approximately for 10 mins. The overall result was very good. The product had good color and tremendous flavor. The spicy flavor was a little strong requiring reformulation to tone down the flavor. After working with all three products the group unanimously selected boudin balls for our product throughout our development. We will continue to formulate new ways to implement wooden chicken breast into our dish, creating a product that the general product to enjoy.
